Title: Scanning all files

Is the on-demaned scanner of Avast4 -by default- scans all file types?
If not, how can I configure it to?  ???

Do you mean the Simple or the Enhanced User Interface?

Well this is what the Quick, Normal and Thorought scan levels are all about, right? Read the introductory help that opens (or used to open) when you open avast (can be opened from the context menu in avast as well).

Right... as the help says, when you run a Thorough test, all the files will be scanned.
