Avast settings > exclusions (in german: "Ausschlüsse"):
1) "Angabe der Pfade, die von der Prüfung auszuschliessen sind."
the right word is "auszuschließen"
2) Avast settings > troubleshooting (in german: "Fehlerbehandlung"):
"Überprüfer Vollbild Anwendungen (z.B. Spiele) bevor Popups angezeigt werden"

I can see that there are many occurrences of the word "schliessen" in avast! resources (in various forms - einschliessen, ausschliessen, ..., or simply schliessen). Should the word always be written with ß?

Yes, these words always with ß.
German words are very strange. So the difference between ss or ß is that ß is only in long spoken word (long vowel) or after a diphtong (i dont know the english word for it).
