When my background processes are enabled in Avast, streaming videos etc YouTube Flash content, the playback freezes some seconds, 0-5 times every minute. When I disabled the background processes this issue went away.
Is there a way to configure Avast to get rid of this problem?

I'm using Firefox, my specs are Win 7 x64, 8GB RAM, AMD II x4 CPU, SSD.

I am not getting this and my specs are in the ballpark of yours on a Win 7 machine.  I usually play all youtube videos in 720p. 
Latest Avast Stable, Windows 8.1 64 bit

Depending on which version of FF and what addons (extensions) you are using the problem might be with FF or one of your extensions.  Off and on over the years I have had hanging problems with Firefox and I am pretty confident it has always been due to one of the extensions.   The reason I say this is because the problems come and go as the extensions I am using are updated or as the website cleans up their scripts.

I would try playing the videos with all of your extensions disabled, though if you are using NoScript odds are the problem is there.   NoScript could be finding a scripts it doesn't like and it could be correct or maybe not.

You could also open the avast! Real-Time Shields GUI and play the vidoes.   Watch and see if there is a lot of activity in the shields when you are playing the video especially when the video hangs

Pretty much confirmed it's an Avast background scan issue. Most noticable when streaming 720 and 1080.
The background process works as usual not more/less when streaming the videos, although it seems to set an impact on it.
FF is RAM hungry as it is with 400 mb and Flash player 100 mb, although I 8 gb for that matter.
Although for sure Flash in Firefox doesn't like Avast, and it has nothing to do with plug-ins.

So I'm thinking for a solution, although there seem no.

If you are a experienced Firefox user, then you probably would know about safe mode.  I would launch Firefox in safe mode, then play a flash video on youtube.  All youtube flash video have an option called "show info" that lets you see if the video you are watching is dropping frames. 

I have an older stock q8200 quad processor, 4 gigs of ram and Win 7 64 bit with Firefox and I am not seeing any dropped frames at 720p, or 1080p for the Avatar HD trailer http://www.youtube.com/watch?v=_i2RCBa3l-g&hd=1
Used this specific clip b/c it is good benchmark trailer, being long (to test streaming performance) and with a lots of action/motion which taxes system. 

And this is with my "dirty" profile or main profile with 9 extensions, and the browsing session has been on for while meaning according to task manager Firefox has accumulated more than 519,000 k of memory and that is not including the Flash plugins which is taking another 100,000 k or so and of course I have Avast Free running and all its real time modules running including the script shield patch. 

I am not doubting that you are seeing what you are seeing, but I would double check your setup again to make sure Avast is really the cause.

I'm dropping around 80-100 frames with/without extension/Avast.
I have had this issues for a long time, with all the Flash/FF/GPU updates installed.

There's no such version of Flash, the latest beta version would be 11.6.x
