There is no fixed frequency, but there are on average two a day, but avast checks for the presence of an update periodically. That duration depends on the version of avast that you have, free or paid.

There are also streaming updates released multiple times a day, the streaming update is used for updates that ideally shouldn't wait for the next virus definitions update. So far today I have had one virus definition, but have had 37 streaming updates.

As mentioned, yes they are silent, the last thing you would want with 42 streaming updates so far today are noisy ones.

As said above 2 VDF updates per day but sometimes 3 (especially for FP's fixing) BTW I receive a stream update every 10 min (when there is data to submit).

That's the bit I don't get. How do you know? Where can I find a log for it? Thanks.

Check the avast defs sub-folder there may be a sub-folder with YYMMDD99_stream were YY is the year, MM is the month, DD the day and the 99 is a number. See image click to expand.
