Would you have to uninstall avast to run Windows Defender or would just disabling the shields be enough.

Personally I wouldn't even entertain the idea of running Windows Defender - if I did there would have to be a good reason to do so - you mention nothing about why/what you are trying to achieve here.

Windows Defender, I believe can be set for on-demand scans, but again I have no idea what it is you are trying to achieve here.
Avast can be paused and that should be enough - again I have no idea what it is you are trying to achieve here.
Avast can be set to Passive mode - again I have no idea what it is you are trying to achieve here.
So we are going to go well off-topic here as I don't believe this is a single answer scenario.
