Can you not use the 'Open With' right click option in Windows Explorer (image1), select the Open With Option, then Choose Program...

From the next screen (image2), select your PDF viewer and check the 'Always use the selected to open this kind of file.'

Thanks DavidR. I really appreciate your help. I got my PDF icons back and double clicking them will open them.  :)
