Spam happens in the best of places. We are actually having Spam Caserole for supper tonight.

SPAM- CASSEROLE   

1 can Spam, ground
1/2 c. bread crumbs
1 tbsp. cooking oil
1/2 c. chopped onion
1/4 c. chopped celery
3/4 c. ketchup
1 tbsp. sugar
2 tbsp. Worcestershire sauce
1/2 tsp. chili powder
1 lg. can lima beans, drained
3/4 c. water

Combine ground Spam and bread crumbs. Form into small meatballs; brown a few at a time in hot oil in skillet. Remove from skillet; set aside. Add onion and celery to skillet; saute until tender (do not brown). Stir in ketchup, sugar, Worcestershire sauce, chili powder, lima beans and water. Bring to a boil.
Combine bean mixture and meatballs. Turn into greased 2 quart casserole. Bake at 350 degrees, 45 minutes or until hot and bubbly. Makes 6 servings.

What Is It THEN??

SPAM AND BEANS   

1 lg. can Spam
1 lg. can pork and beans
8 oz. Cheddar cheese (grated)
1 med. onion, chopped
1 green pepper, chopped
3 tbsp. oil
1/2 c. brown sugar
1/4 c. ketchup

Slice Spam in skillet. Saute onions and green pepper in oil. Remove and brown Spam slices on each side. In casserole dish, mix beans, sugar and ketchup. Add onions and peppers. Mix all together. Layer Spam slices on top, then sprinkle cheese over all. Bake 45 minutes in 350 degree oven or until beans bubble and cheese

We've sorta wandered OT with the recipes, but what the heck ...

My personal favorite is simple, slices fried lightly for sandwiches on toast, with whatever extras/garnishes strike my fancy at the time.

Actually we could bump that slightly back onto topic ... "serves" several million, with very little effort.
