I don't even use Edge, but if I were it is wise to keep whatever browser you use up to date.  Whilst some changes will be functional there can always security updates.

I suggest getting used to using google - https://www.google.co.uk/search?q=what+changes+are+in+the+latest+Edge+browser+update - this returns many hits.  If you also added what Edge version/build then it would be even more related.

You update your other programs including your Antivirus why would you not update
the one App you use more than any other? Your browser is the most used app outside of the operating system itself.
