Easeus.com has a good free disk imaging tool.

G4U is a free host/server imaging tool.

NTBackup works fine... even though you said no windows tools

I use Macrium reflect. Good reviews. Learned about it at Wilders (another good security forum.)
Must admit, haven't had to acid-test it, yet.

It's a little hard to work with, but it does work.

Looks like reflect has a nice, easy GUI.  If you're into that sort of thing, it will probably be much easier to use than G4U
