How do I get that icon to stop showing up in the system tray every time my email is scanned?

Start the Mail Protection Wizard, select manual setup and there is the appropriate check box at some page.

Try this. Go to the Mail protection wizard and remove mark from "show taskbar icon..." if you are using other program than ms outlook. if you are using ms outlook: right click a tray icon/on access ..../ choose more details/ mark ms outlook plugin/ customize/ advanced and remove mark from "show tray icon when...'". Just remember, that if you disable the task bar icon, and for some reason the scanning should stop, you would not know about it unles a scanning message is affixed to your e-mail....
