Generally speaking, Standard level use common (default) settings. All executables are scanned when you run them and all documents and scripts when you open them. High is the paranoid mode that works like the Standard mode but even files being copied are scanned.

Well, it's a good question that deserves a specific answer from Alwil. I can't reach further than this  ::)

The help file describes what the sensitivity slider does for all providers except the P2P and Instant Messaging.
