I have a number of email accounts and need to know if I can turn off email scanning on some accounts while still have the others scanned.

You can configure the mail scanner to ignore some mail server addresses. Click on the "a"-icon in Windows taskbar, click Details>>, double-click "Internet Mail" and select Redirect.

I entered one of the email addresses into the "Ignored Addresses" and Avast still scans that account.
Also how do you add others email addresses?

You should enter mail server address (like pop.atlas.cz or 212.47.13.64), not email address.
