I got it! I believe (I don't know anything about programming but this is my best guess) that when my browser tried to update this morning there was an error and it left some temporary files uninstalled, hence why several plug ins were missing. But since they existed, the reinstalls didn't try to install them again. So, after uninstalling a 5th time and going to make sure all files were deleted, I found the .tmp files that had avast files in them and deleted them too. Now everything's working fine.
Good news, thanks for the feedback. :)

After experiencing an almost identical problem, I can offer the following method to delete remaining corrupted Avast files after uninstalling...
Avast do have a little publicised 'Uninstall Utility' program - https://www.avast.com/en-gb/uninstall-utility , which in my case after following the instructions, successfully deleted all remaining Avast files, so a 'clean' re-install could be implemented, thus finally reinstating the 'Adblock' and 'Bank Mode' extensions for my Avast Browser!
